Cocktail Meatballs Diabetes Recipe Ingredients:
1 lb reduced-fat ground beef
9 oz fresh ground turkey breast
1/2 cup quick-cooking rolled oats
1 medium onion, finely chopped
1 garlic clove, minced
1 tsp dried thyme leaves
1 tsp dried marjoram leaves
1 large white egg
1/2 tsp salt (optional)
1/8 tsp black pepper

1 15 oz can low-sodium or regular tomato sauce
1/2 cup water
2 Tbsp packed brown sugar
1 Tbsp balsamic vinegar
1 garlic clove, minced
3/4 tsp dry mustard
2-3 drops hot pepper sauce
1/4 tsp allspice

Cocktail Meatballs Diabetes Recipes Instructions:
1. Preheat the oven to 400 degrees. Spray the bottom and sides of a large baking pan with nonstick spray coating. Set aside.
2. In a large bowl, combine the ground beef, ground turkey, oats, onion, garlic, thyme, marjoram, egg white, salt (if desired), and pepper. Roll into 68 1-inch balls.
3. Place the balls on the baking pan. Bake for 10 to 13 minutes, or until the meatballs are browned on all sides, turning once during browning.
4. Meanwhile, in a Dutch oven or similarly heavy pot, mix together the tomato sauce, water, brown sugar, vinegar, garlic, mustard, hot peper sauce, and allspice.
5. When the meatballs are browned, transfer them to the sauce with a large slotted spoon, cover, and bring to a boil. Reduce the heat and simmer 30 to 35 minutes, stirring occasionally and being careful not to break up the balls. Skim any fat from the surface of the liquid.
6. Serve immediately, or cover and refrigerate. Meatballs can be refrigerated 2 to 3 days before serving or frozen for up to a month.
